The English name for this dish can be “potato carrot peas” curry. This is another variation from Punjabi Recipes of the dry vegetable dish which is cooked with carrots, peas, and potatoes. The Aloo Gajar Matar Recipe has the combination of taste and flavors of three most important vegetables in its one dish. This sabzi is very healthy and easy to make. The ingredients and their health quotients along with its mild taste make it as a kid’s friendly dish. Aloo Gajar Matar Recipe

Ingredients for Aloo Gajar Matar Recipe:

  • Potatoes/ Aloo – 250 grams
  • Carrot/ Gajar – 150 grams
  • Matar/ Green Peas – ¾ cup
  • Cumin Seeds/ Jeera – 1 tsp.
  • Finely chopped Ginger – 1 inch
  • Coriander Powder – 1 tsp.
  • Turmeric Powder/ Haldi – ¼ tsp.
  • A pinch of Asafoetida
  • Green Chilli (Finely Chopped ) – 1 piece
  • Oil – 1½ tbsp.
  • Water – 2 to 3 tbsp.
  • Chopped Coriander Leaves
  • Salt to taste

Note: You can use fresh or frozen peas. You can also add turmeric powder for the slight taste and color. You can use saffola Oil.

Method for Aloo Gajar Matar Recipe:

Pre-Preparation:

  • Take the medium sized potatoes and carrots.
  • Rinse the vegetables properly under water.
  • Peel off the skin of the potatoes and carrots.
  • Using chopping board/chopper, finely chop the potatoes along with the ginger and green chillies.
  • You can grate the carrots or finely slice chop them.
  • If using frozen peas then thaw them before use.

Note: Deseed the green chillies before chopping. You can chop all the veggies into small cubes.

Method for Aloo Gajar Matar:

  • Heat oil in a pressure cooker and wait till gets heated completely.
  • Add cumin seeds and let them splutter. Also, add a pinch of Asafoetida.
  • Now add chopped ginger and green chilli. Sauté for few seconds.
  • Now add chopped carrot, potatoes, and green peas. Sauté for 2-3 minutes.
  • Now add coriander powder, salt, turmeric powder. Mix well.
  • Now add water. Mix well again.
  • Now cover the pressure cooker with the lid and pressure cook for 2-3 whistles or until the veggies are cooked on medium flame.
  • Let the air escape on its own and then open the lid.
  • Check whether there is some extra water in the cooker or not. If yes then simmer the cooker on the slow flame until excess water is evaporated.
  • Now add chopped coriander leaves and mix well.

And the delicious Aloo Gajar Matar is ready to eat.

Note: This dish can be made in a pan also. While making in a pan add some extra water and cook by covering with a lid. In case if the veggies are raw and water is evaporated then add some water and continue cooking.

The dish is tasty but it is not all spicy and also it does not need onion or garlic for its preparation, thus this dish is also preferred by the Jains. The technique of making this nutritious recipe is simple and swift, suitable for everyone including the non-kitchen person.

Though this dish is available at every other Punjabi Restaurant and Dabha, it is always best to make it fresh and hygienic food at home. Apart from being light on the pocket, its light on stomach and suits best when you have to prepare in less time. Here I have pressure cooked the veggies but you can also make it in a pan. I have mentioned the procedure below. Using a pressure cooker saves time thus I opted for it.

Aloo Gajar Matar goes well with roti and paratha along with pickles and salad. It can also be served as a side dish with dal rice. It can also be served in tiffin or lunch box along with rotis. It is also a no onion and no garlic recipe.

  • The time required for cooking the Aloo Gajar Matar Recipe is 30 minutes.
  • The measured ingredients serve 3 people.
  • If you are cooking in the pressure cooker, then you may also add broccoli.
  • Instead of green chilli red chilli powder can also be used.
  • If making for toddlers then avoid the addition of ginger and green chilli.

Serve this mildly flavoured Aloo Gajar Matar with hot with roti, chapatti or plain paratha. You can also serve it as a side dish with warm dal and plain steamed rice. To make your dish as a complete meal, place Masala Papad on a plate as a side accompaniment along with any type of refreshing Raita.
