With just the name “Dahi Vada”, many of us get water in mouth. It is the delicious and chatpata snack from Indian Cuisine. But not all can enjoy it because it is highly calorific. This Baked Dahi Vada Recipe is the healthier version of the regular fried Dahi Vada. It is the healthy yet tasty dish. The curd mixture and two chutneys can be prepared in advance.

Ingredients for Baked Dahi Vada Recipe:
To make the Vada you would need lentils are the core ingredients. For the Dahi Vada Sauce, the fresh curd is the core element. The rest of the side ingredients are the spices which are optional.
For Making Baked Vada:
- Split Black Gram (Urad Dal) – 1 cup
- Split Green Gram (Moong Dal) – ½ cup
- Ginger – 1 tsp.
- Green Chillies – 2 pieces
- Black Pepper Powder (Kali Mirch) – ¼ tsp.
- Asafoetida (Hing) – 1 pinch
- Salt – as per taste
Note: You can make the Vada with only one type of Dal as well.
For Dahi Vada Sauce:
- Fresh Curd – 2 cup
- Red Chilli powder – 2 tsp.
- Chaat Masala – 1 tsp.
- Roasted Cumin Powder (Bhuna Jeera Powder) – 1 tsp.
- Sugar – 2 tsp.
- Coriander Chutney – 2 tbsp.
- Tamarind Date Chutney – 2 tbsp.
- Black Salt – as per taste
Note: You can easily prepare the Tamarind-Date Chutney at home. If you have the fresh coriander leaves, then you make the Coriander Chutney as well. These chutney’s can also be prepared in the microwave.
Steps for Baked Dahi Vada Recipe:
It is very easy to bake the Dahi Vada. Prepare the batter for the Vada and bake them. Then drizzle the fresh curd paste over the baked Vada. Season with some spices for the taste.
Make Dahi Vada Mixture:
- Take Urad dal and pick stones.
- Check the Urad Dal and remove other impurities from it.
- Do the same for Moong dal.
- Take a bowl and add curd in it.
- Now, add sugar in the curd.
- Mix everything very well.
- Keep this curd sugar mixture aside for making the dish.
- Take a pan and add water to it.
- Heat the water and make it warm
- Now, take a bowl and add water in it.
- Add both these lentils in the warm water.
- Soak these lentils for at least 5-6 hours.
- Take green chillies and chop them.
- Take ginger and grate them.
- Now, take a mixer-grinder jar and clean it with a dry cloth.
- Add chopped green chilli, grated ginger, black pepper and Hing in the jar.
- Grind everything into a paste and keep it aside.
- After 5-6 hours, remove excess water from the Moong dal and Urad dal.
- Transfer the Moong dal and Urad dal into the mixer-grinder jar.
- Grind the dals into a smooth paste. Add water if necessary.
- Do not add too much water. It should be a thick mixture.
- Now, take a bowl and transfer the thick dal mixture in it.
- Add the ginger-chilli paste in the bowl and mix it well.
- Add salt to the mixture and taste it.
Note: Adjust the taste of spices in the mixture as per your choice. Do not over soak the Dal.
How to Bake Dahi Vada:
- Adjust the spices if necessary.
- Now, take oven tray and grease it with oil.
- Take a bit of the Vada mixture in your hand and make patties of it.
- Now, place it on a greased tray.
- Prepare the tray and if needed prepare another tray.
- Now, place the tray inside the microwave oven.
- Set the temperature to 100 degree Celsius and bake it for 2 minutes.
- Check if they are cooked or not. If not cooked, cook it for more minutes.
- Once cooked, Apply oil over them and flip them
- Cook from both the sides.
- After the vadas are baked, transfer them into a bowl.
Note: The baking time may differ based on the type and the temperature of the microwave.
Prepare Baked Dahi Vada:
- Now, take another bowl and mix water and salt in it.
- Add the baked Vada in the water.
- Soak them for about 10 minutes.
- After 10 minutes, squeeze all the water out of the baked vada’s.
- Place 2 squeezed vada’s in one serving plate.
- Now, add some curd-sugar mixture over the vada’s.
- Sprinkle roasted cumin powder on the vada’s.
- Sprinkle black salt and Chaat Masala as well.
- Add ½ tsp. green coriander chutney and ½ tsp. or less tamarind date chutney as well.
- Sprinkle some red chilli powder over the dish.
- Serve Delicious Dahi Vada dish.
Note: Always use the fresh homemade spices for the best flavours and fragrance.

- The packet of Chaat masala is available in the market.
- But, you can use fresh homemade Chaat masala powder.
Serving & Garnishing:
- Sprinkle chopped coriander leaves over it.
- You can even sprinkle Maggie magic masala over it.
- You can even sprinkle few Sev over the Dahi Vada.
- Place a mint leaf on the Dahi Vada dish and serve.
You can eat Baked Dahi Vada as much as you want to without any restriction. It is one of those few Chaat’s which is served chilled in summers. It is an absolutely delightful snack to have at any time of the day. The Vada can be crispy and crunchy, but they become soft when submerged in water. These soft baked vada’s easily melt-in-mouth in the first bite. There is no difference is taste or texture of fat-free baked Dahi Vada.
