Ingredients for Chakli Recipe:

  • Rice Flour (Chawal Atta) – 1 cup
  • Gram Flour (Besan) – ½ cup
  • Carom Seeds (Ajwain) – ½ tsp.
  • Cumin Seeds (Jeera) – ½ tsp.
  • Turmeric Powder (Haldi) – ¼ tsp.
  • Red Chilli Powder (Lal Mirch Masala) – 1 tsp.
  • Asafoetida (Hing) – 1 pinch
  • Sesame Seeds (Til) – 1 tbsp.
  • Water – 1 cup
  • Butter – 2 ½ tbsp.
  • Oil (for deep frying) – as required

Note: It is recommended to use homemade butter for making Chakli. You can also use oil instead of butter. The sesame seeds used can be white or black. The Chakli can be prepared from whole wheat flour.

Steps for Chakli Recipe:

It is very easy and simple to prepare Chakli at home. Firstly you have to make the Chakli batter and the dough. Then you have to roll the Chakli in the spiral shaped and finally deep fry the Chakli.

Make Batter for Chakli:

Chakli Mixture:

  • Take rice flour (Chawal ka Atta) in a bowl.
  • Add the gram flour (besan) to this bowl.
  • Properly sieve these two flours together.
  • Take a bowl and add sieved flour in the bowl.
  • Add ¼ tsp. turmeric powder in the flour.
  • Also, add the 1 tsp. red chilli powder in the flour.
  • Then add around ½ tsp. cumin seeds to the mixture.
  • Mix everything and add one pinch of asafoetida (Hing).
  • Then fold and combine the powders in the flour.
  • Stir everything and add ½ tsp. carom seeds in the mixture.
  • Now, season the mixture with the little bit of salt.
  • Mix nicely and keep the bowl aside for a while.

Note: you can fold the dry flour mixture with spoon or spatula.

Mix Melted Butter:

  • Once the ingredients are mixed, you have to proceed further.
  • Then, you need to add the melted butter to this dry mixture.
  • So, take a frying pan and place it on the stove.
  • Add 2.5 to 3 tbsp. butter in the pan and turn on the flame.
  • Melt the butter over the medium flame and turn off the flame.
  • Add the melted butter in the flour bowl and mix it.
  • Use spoon when mixing because the melted butter will be hot.

Note: You can also mix the melted butter in the dry flour mixture with your fingertips.

Make Chakli Dough:

  • Take a saucepan and place it on the stove.
  • Add 1 cup of water in the saucepan and heat it.
  • As the water becomes hot, turn off the flame.
  • Add hot water to the flour bowl and mix nicely.
  • Mix everything properly and begin kneading.
  • Knead the dough until you get a firm dough.
  • If the dough is too soft add more flour and knead again.
  • If the dough is too hard, then add little warm water and mix,
  • After making the dough, cover the bowl of the dough.
  • Keep this bowl aside for a while to rest. (Let it set for 30 minutes.)

Note: You must pour the water in the flour mixture in small parts. You can add more hot water if you require.

How to Make Chakli at Home:

Prepare the Chakli

  • After 30 minutes, check the Chakli dough.
  • Also, take Chakli maker (murukku maker) from your cupboard.
  • Clean it from inside and apply some water inside the Chakli maker.
  • Make small balls of the dough and add it in the Chakli maker.
  • Close the Chakli maker lid and tighten its lid to prepare Chakli.
  • Press the Chakli maker from the top and begin the process.
  • Move the Chakli maker in a circular way to make spiral shaped Chakli.
  • Spread the Chakli on the aluminium foil or butter paper or even a plain plastic.
  • When making Chakli, if the Chakli breaks, then add some water. Again knead the dough.
  • If the Chakli dough is coming out too easily and you are not able to make the shape, then add more flour. Mix the flour and knead it again.
  • At the end of the spiral Chakli, press the ends and close it.
  • You must form the Chakli till the dough breaks down to the end.
  • Keep holding the Chakli maker and press it till it forms the last concentric circle.
  • This way make all the Chakli over the butter paper.
  • Cover the formed Chakli with the kitchen napkin or cloth, so that they don’t become dry.

Note: Always make the Chakli over the butter paper or aluminium foil, so that it does not get stuck to the surface. Making the spiral shaped Chakli over the plastic paper makes it easy to remove the Chakli.

Fry the Chakli

  • Take a deep kadhai and place it on the stove.
  • Add saffola active oil in the kadhai and turn on the flame.
  • Heat the oil and wait until the oil is sufficiently hot.
  • Before you start frying Chakli, you need to check if the oil is hot enough.
  • So, as the oil becomes hot, add a small bit of dough and check the oil temperature.
  • If the dough bit rises too quickly, the oil is too hot. Lower the flame and let the oil cool a bit.
  • If the dough piece sits down, the oil is cold. Let the oil become hot enough to fry the Chakli.
  • If the dough piece rises gradually, means the oil ready to fry.
  • Now, lift the Chakli from the butter paper and slowly transfer 3 to 4 Chakli in the oil.
  • Gently slide the Chakli from the little height and deep fry them.
  • Flip each of the Chakli and fry from another side as well.
  • As the Chakli or chakri is golden and crisp, transfer it from the pan to a plate.
  • Use kitchen napkins to remove excess oil from the chakris.
  • Taste one fried chakri and check if the chakra is too hard or soft.
  • If the chakri is too hard, add some oil / ghee / butter in the dough. Then, knead again.
  • Also, taste the salt and adjust it.
  • After the Chakli is fried, also check if it has absorbed oil or not.
  • If the chakri breaks in oil, then add about 1 tbsp. rice flour in the mixture.
  • Knead the dough again and make more Chakli.
  • This way, fry all the remaining Chakli in small batches.

And your delicious savoury Chakri is ready!

Note: Do not fry more than 4 chakli’s at one time. You must not completely fill the frying pan. Otherwise, there would be no space to fry the Chakli evenly and flip it.
