Ingredients for Dabeli Masala Recipe:

  • Black Cardamoms (Badi Elaichi) – 1 tbsp.
  • Cumin Seeds (Jeera) – 2 ½ tsp.
  • Coriander Powder (Dhania Powder) – 3 tbsp.
  • Cinnamon sticks / Dalchini (1 inch) – 10 pieces
  • Red Chilli Powder – 3 tbsp.
  • Black Peppercorns – 1 tsp.
  • Cloves (lavang) – 2 ½ tsp.
  • Sugar – 1 tbsp.

Method for Making Dabeli Masala:

  • Take cumin seeds and pick stones.
  • Check and remove other impurities.
  • Do the same with other ingredients.
  • Take Cinnamon sticks and divide 10 pieces of 1 inch.
  • Take a non-stick pan and place it on the stove.
  • Clean it with a clean and dry cloth.
  • Add the spices together in the pan.
  • Dry Roast together till fragrant.
  • It would take 2 to 3 minutes for these ingredients to roast.
  • Once roasted, turn off the flame and transfer them into a plate.
  • Now, take a mixer-grinder jar or coffee grinder.
  • Clean the jar using a dry cloth.
  • Now, add the dry roasted spices in the jar and grind them.
  • Make a smooth powder of it. Grind to a fine powder consistency.
  • Once grinded, transfer the powder into the air-tight container.
  • Store the Dabeli masala in cool and dry place.
  • Use Dabeli masala when making Dabeli.

Dabeli is the most famous snack sold on streets of Gujarat and Mumbai. Remarks:

  • Do not over-roast the spices.
  • If you do not have coriander powder, you can make coriander powder at home.
  • I recommend you to use Kashmiri Red Chillies and make red chilli powder of it. You can even use the packed Kashmiri red chilli powder.
  • Do not store the Dabeli Masala more than 3-5 days. (depends on atmospheric condition)
  • You can also use oil to make the thick paste of the Dabeli Masala spice powder.
  • To balance flavours, you may add salt as per your choice.
  • If you like the garlic taste, you can add ½ tsp. garlic powder.
  • This masala can also be used for Pav Bhaji or as a substitute to regular homemade Garam masala.
