Easter Biscuits Recipe Ingredients:
- Caster Sugar – 2/3 cup
- Butter – 200 grams
- Egg White – 2 cup
- Egg Yolk – 2 cup
- Plain Flour – 2 ½ cup
- Mixed Spice – 1 tsp.
- Currants – ½ cup
- Raisins 1 ½ tbsp.
- Milk – 3 cups
Note: You can use Agar Powder instead of Egg White. You can also use Vinegar instead of Egg Yolk.
Easter Biscuits Recipe Steps:
Pre-Preparation:
- Preheat the oven at 180 F or 160 C.
Note: You can also make the Easter biscuits over the gas.
Preparation:
- Whisk the creamy mixture of butter and sugar till it gets the light texture. Break the eggs and beat in the yolks into the mixture when it becomes fluffy. Blend the ingredients in food processor till the crumbles are formed.
- Add milk and mix currants with raisins.
- Sieve the flour and add into the mixture. Fold the flour into the bowl to make the stiff dough from the creamy mixture. Knead the dough with soft hands properly and let it rest for some time. Roll the dough and check whether the flour and yolks have accustomed.
- Cut the equal sized round shapes of the dough. Roll the small round balls and press with palm to flatten. Prick each piece with fork.
- Take a baking sheet, grease with light oil or butter. Transfer the round-balls from the bowl and place them over the baking sheet. Keep the tray in microwave for at least 15 minutes.
- Take the tray out from the oven, and apply egg white with help of brush. Sprinkle the saved sugar over the biscuits and again keep them for baking till they become golden brown. They must have pale finishing.
- Remove the tray from the oven and keep the tray over the wire rack for biscuits to cool for some time.
And the delicious fluffy biscuits are baked. Prepare the icing and fill into the piping bag and spread over the biscuits. Let the seasoning settle for some time before serving .
Note: Use the flour cutter for the accuracy of shape. It may also takes less than 15 minutes to bake, keep checking.
