Eggless Pound Cake Recipe Ingredients:

  • Granulated Sugar – ¼ cup
  • Whole Wheat Flour – 1 ½ cups
  • Cake Flour – 1 ½ cups
  • Baking Powder – 1 tsp.
  • Baking Soda – ½ tsp.
  • Vanilla Extract – 1 tsp.
  • Unsalted Butter – ½ cup
  • Condensed Milk – ¾ cup
  • Warm Milk – ½ cup
  • Warm Water – ½ cup
  • Salt – as per taste

Note: Use sugar-free instead of sugar. Refrain from using ghee or oil while you prepare your cake. Always prefer to use the unsalted butter and do not mix in the salted butter in the cake batter.

Never replace the baking soda or baking powder with their alternatives. Both these ingredients play an important role in baking the proper cake. It is compulsory to use both of them and not just one of them.

Eggless Pound Cake Recipe Steps:

Pre-Preparation:

  • Pre-heat oven to 180 degrees C for half an hour. You can also set the temperature to 170 degrees if your microwave is convection mode. (click to buy oven online)
  • Filter Flour:
    • Sift the whole wheat bowl in a bowl.
    • Now take the cake flour and sieve it in the same large mixing bowl.
    • Strain the baking powder along with the baking soda in the same bowl.
    • Mix the strained ingredients properly and also add salt as per the taste.
    • Set this bowl aside for some time for ingredients to rest.
  • Creamy Paste:
    • Attach the whipping stand with the bowl.
    • Combine sugar and oil in the bowl. Beat the mixture of oil and butter till it becomes creamy.
    • Whip at a medium speed and also scrape the sides.
    • Do this for few minutes till the mixture achieve light texture and becomes airy.
    • Continuously whip the mixture till it becomes smooth.
    • Once done, keep this aside.

Note: Use whipping machine or you may whip with the spoon or whisker. Use saffola oil when cooking.

Preparation:

  • Take the saucepan and melt the unsalted butter in it at the low flame.
  • When the butter has been melted, take the pan down and add the warm condensed milk.
  • This milk will be sweet so try not to use the salted butter.
  • Stir and whisk the milk properly.
  • The whole mixture should be smooth and homogeneous.
  • To this even mixture, add few cups of the warm milk.
  • Now add sugar and whisk at medium pace till the sugar completely dissolves in the mixture.
  • Sprinkle the vanilla extract within this smooth and creamy mixture.
  • Now, to this add creamy paste and also add the sieved flour mixture.
  • Gently combine the dry ingredients with the wet ingredients.
  • Whisk the mixture lightly with the light hands.
  • Try to mix the ingredients evenly with each other.
  • Make sure there are no lumps in the mixture.
  • Butter and grease the cake pan.
  • Pour the batter into the cake tin.
  • Scrape the batter from the sides with a spatula and add to cake pan.
  • It’s important to tap the sides of the cake pan so that the air bubbles are released.
  • Bake the cakes in the oven until the surface becomes fluffy. It should bounce back when pinched with the toothpick.
  • Remove the cake from the baking oven and keep the tray of cake pans over the wire rack and allow them to cool completely.
  • Once the cake is cooled, with the help of the knife, trim the uneven top upper layer of the cake to make it look even.
