The candied Fruit Cake Recipe is the best baking option when you have to choose the cake with less batter. Affection towards the cakes affects the diet, but having the healthy cakes has no harm on health.

Fruit Cake Recipe Ingredients:
Granulated Sugar – 1 ½ cup
Cake Flour – 2 ¼ cups
Baking Powder – ½ tsp.
Baking Soda – 1 tsp.
Corn Starch –1 cup
Milk – 1 cup
Orange Juice – ½ cup.
Lime Juice – ½ cup.
Orange Zest – 1 orange zest
Lemon Zest – 1 lemon zest
Eggs – 3 eggs
Melted Butter – ¾ cup
Walnuts – ¼ cup
Almonds – ¼ cup
Hazelnuts – ¼ cup
Pecans – ¼ cup
Raisins – ¼ cup
Cranberries – ¼ cup
Cherries – ¼ cup
Vegetable Oil – ¼ cup
Water – 1 cup
Salt – ¼ tsp.
Note: You can use any dry fruit, any candied fruit or any nuts of your choice.
Fruit Cake Recipe Steps:
Pre-Preparation:
Pre-heat oven to 160 degrees C or 325 degrees F for 40 minutes.
Flour Mixture:
Sift the cake flour in a large mixing bowl.
Sieve the baking powder in the same bowl.
Also, add the corn starch powder along with the baking soda.
Mix the strained ingredients properly and also add salt as per the taste.
You have a whip attachment, then fix it with another bowl of the stand mixture fitted.
Whisk the ground almonds with the flour mixture.
Keep the bowl aside for some time.
Coating the Fruits:
Chop the nuts, dry and candied fruits.
Add 1/4th of the flour mixture to this bowl.
Season the fruits with this mixture evenly.
Cream Mixture:
Mix the sugar with the butter.
Beat the mixture of milk and butter till it becomes creamy.
Add more sugar along with the water so that it becomes fluffy.
Now, break and add the eggs. But mix one at a time, each after you beat the mixture well.
Whip at a medium speed and also scrape both the sides and bottom.
Squeeze in the lime and the orange juice along with the lemon and orange zest.
Do this for 5-7 minutes till the mixture achieve light texture and becomes airy.
Continuously whip the mixture till it becomes smooth.
Fold the mixture with the chopped dried and candied fruits.
Sprinkle some nuts over the mixture and beat it once again.
Once done, keep this aside.
Note: You can also preheat oven to 180 degrees C.
Preparation:
Gradually mix the dry flour mixture with the wet cream mixture.
Mix well the ingredients, fold the two sets of ingredients properly.
Add the chopped walnut or other dry fruits and fold the mixture.
Butter and grease the cake pan.
Pour the batter to the cake tin.
Scrape the batter from the sides with the spatula and add to cake pan.
You can sprinkle more of the chopped almonds and walnut over the top.
Tap the sides of the cake pan, so that the air bubbles are released.
Bake the cake in the oven until the surface becomes fluffy and lightly brown. It should bounce back when pinched with the toothpick.
Remove the cake from the baking oven and keep the tray of cake pans over the wire rack and allow them to cool completely.
Once the cake is cooled, with the help of the knife, trim the uneven top upper layer of the cake to make it look even.
And the flavorful fruit cake is ready to cut and cherish. It is best when served directly from the baking oven.
Note: You may spread little oil or vinegar with a brush over batter if you wish to.
The fusion of dried fruits with the candies fruits is fabulous. Also, the sprinkle of the nuts over the cake batter adds a stupendous spark to the cake. The coalition of mixed dried and the candies fruits provide color and flavor to the cake. The soft and moist texture of the cake easily melts in mouth.
