Kaddu Ka Halwa Recipe Ingredients:

  • Pumpkin – 2 ½ cup
  • Fresh Milk – 1 cup
  • Condensed Milk – 3 tbsp.
  • Khoya – 100 grams (crumbled)
  • Melon Seeds – 2 tsp.
  • Cardamom Powder – ½ tsp.
  • Vanilla Powder – ½ tsp.
  • Cinnamon Powder – ½ tsp.
  • Pistachios – ½ cup
  • Walnuts – 2 tbsp.
  • Cashew nuts – ½ cup
  • Carnival Almonds – ½ cup
  • Sugar – ½ cup
  • Butter – 1 tbsp.
  • Ghee – 1 ½ tbsp. (use patanjali cow ghee)
  • Warm Water – 1 cup

Note: Use either butter or ghee.

Kaddu Ka Halwa Recipe Steps:

Pre-Preparation:

  1. Chop Kaddu:
    • Wash Kaddu (pumpkin) properly under the fresh water tap.
    • Rinse and dry the pumpkin
    • Peel off its outer skin and keep them.
    • Now take the knife and still it throughout the pumpkin to the core.
    • This will give you to pumpkin in two equal halves.
    • Now, slice and chop the pumpkin into small cubes.
    • You can also grate the pumpkin.
  1. Boil the Fresh Milk.
  2. Blanch and peel the nuts you have. Chop into pieces.

Note: The smaller the pieces of Kaddu the better it is to make Halwa.

Preparation:

  • Take a medium-sized pressure cooker and melt the ghee over a medium flame.
  • Once the ghee is melted, add the chopped Kaddu in the pressure cooker.
  • Sauté the pumpkin cubes till they are complete cooked and the raw smell vanishes.
  • Let them cook till they start releasing water within them.
  • This will approximately take 10 minutes.
  • Once they have become soft, add the warm water into the cooker.
  • Now Cover the lid of the cooker and let the Kaddu cook properly.
  • Wait till the 4-5 whistles of the cooker makes a sound.
  • When it’s cooked, gently open the lid of the pressure cooker.
  • Wait till the pressure within the cooker settles down.
  • With help of spoon or fork, check it the pumpkin cubes or Kaddu pieces have cooked or not.
  • With the back end of a spoon, try to smash the pumpkins. If they have become mashable means they are soft and tender.
  • But if they have not cooked, then increase a quantity of water and again keep in the cooker to cook.
  • Let them cook thoroughly with each and every piece should become soft.
  • When the Kaddu pieces have been cooked then place them on the stove in a pan.
  • Simmer the pieces of Kaddu for few more minutes.
  • Now add sugar and cardamom powder.
  • Mix them well and continuously keep stirring well.
  • Keep on stirring and cooking the mixture till achieves the thick consistency.
  • Add milk after 5 minutes and stir the mixture continuously for another 5 minutes.
  • Reduce the milk over the low flame and let the mixture become tender and soft.
  • Wait till the mixture becomes one and pulls away from the bottom.
  • Shift the knob of gas from medium to high, raising the flame.
  • Wait and check if you have got the consistency like the puree.
  • Keep the stove on and let the water reduce within Halwa.
  • Now add the melon seeds and the dry fruits in the mixture.
  • Now sprinkle the cinnamon powder, cardamom powder and vanilla powder over the mixture and stir.
  • Add khoya to this mixture and whisk well. Keeping stirring the runny mixture so that it does not get stuck to the pan.
  • Add ghee in the increase of 1/3 tbsp.
  • When you feel the mixture has turned sticky, again add the condensed milk with the pinch of a cardamom powder. Simmer until the milk evaporates.
  • When you feel the mixture has become translucent then take it away from the flame.
  • Season the mixture with the chopped almonds, pistachios, dates, raisins, and walnuts.
  • Again transfer it over to the gas and cook for a couple of minutes.
  • Transfer the Halwa on the plate, spread it evenly.
  • Cut into the thick small cubes

And the delicious, healthy and hot Kaddu Ka Halwa is ready to serve!

Now, instead of melting the ghee in the pressure cooker, you have to melt in the pan over the medium flame. When you are using the pan, always note to use the heavy thick-bottomed pan, so that your Halwa does not burn from the bottom. Now, once the ghee is melted, similar to the previous method add the small chopped pumpkin pieces into the pan. Allow them to cook and wait till they become soft. As soon as the pumpkin are cooked, they would start to release the water from them. At this stage, when the water begins to lose you have pour in around ¾ cup of water from the above to the pan. You do not have to let the pumpkin pieces dry. So, if the water starts to release and dry from the pan, you have to keep pouring the extra water till the pumpkins are cooked. Once the pumpkins are soft and cooked, the rest of the recipe steps remain same. Add the side ingredients and flavoring agent which gives the Halwa both taste and the puree like texture.
