Soft, fluffy, spongy khaman steamed and layered by tempering of water and mustard seeds is marvelous. Khaman is famous not only in Gujarat but also all over India.

Description: Khaman can be steamed in a traditional boiler or in a microwave also. I have discussed both the ways here. Just follow the steps and you will have perfect khaman in your plate.
Ingredients Required in Khaman Dhokla Recipe :
Gram flour/ besan – 1½ cup
Semolina/ rava -1½ tbsp
Sugar – 4 tsp
Green chili Ginger paste – 1 tsp
Lemon juice- 1 tsp
Baking soda/ eno – 1 tsp
Salt to taste
Oil -3 tsp
Mustard seed/ rai- 1 tsp
Asafetida/ Hing a pinch of
Curry leaves / kadhi patta 5-6
Green coriander leaves
Grated coconut
Green chili chopped – 1 piece
Steps For Making Khaman Dhokla :
1) In steamer
Take a deep bowl, add besan, semolina, salt, green chili Ginger paste, sugar, lemon juice in it. Now add approx ¾ water in it and mix well. Use a whisk and make a smooth batter.
Now grease a thali in which you want to make khaman.
Just before steaming add baking soda in the batter.
Pour the batter immediately in the greased thali. Spread evenly by rotating the thali.
Put it in the steamer and steam for 10-15 minutes or until khaman is cooked. keep it aside.
Now for preparing tempering heat oil in a small non stick pan. Heat the oil.
When the oil gets hot add asefoetida, now add mustard seeds in it. When seeds crackle add curry leaves, chopped chilies. Saute for few seconds.
Now switch off the flame. Now add ½ cup of water and mix well.
Pour the tempering on the steamed khaman immediately.
Cut into pieces.
2) In microwave
Make the batter in the same way as above
Grease the plate to be placed in the microwave.
Add baking soda and mix well. Immediately pour the batter in the plate.
Now put it in the microwave. Put the microwave to high and cook for up to 6-8 minutes. Check with a toothpick.
Prepare the tempering,pour in the khaman. Serve it.
