Falooda Kulfi is a refreshing dessert which is made from two separate ingredients. The very own Indian Ice-cream is made from the combination of thickened and reduced milk. It is then flavoured with flavouring agents like saffron and cardamom powder. Whereas th Falooda is nothing but the thick Sev made from fresh corn flour. So, the Kulfi Falooda is the blend of these two ingredients which makes almost a perfect dessert dish for grand parties.
Both these Kulfi and Falooda area available in the market but you can make them at home as well. If you go in the ice-cream or the stores, you would be easily able to get the dried Falooda. But then of course it has be rehydrated before you use to make the Kulfi Falooda. If you have not hear about Falooda, and if you are wondering what it is, then it is like noodle like long strings made from corn-starch flour.
Though the Falooda Sev is readily available in stores, you can also make it Sev at home. To make the Falooda Sev at home, you would have to first take 1 cup corn flour. Then you would have to mix that corn flour in the 2 ½ cup of water. Mix the corn flour properly in the water and a make a smooth batter. You can continuously keep mixing these two elements till you get the batter of required consistency. Make sure that there are no lumps formed in the batter. Once the Falooda Sev batter is prepared, then you have to cook this over a medium flame on the stove. So, transfer this batter to the thick-bottomed non-stick pan and stir well. Keep on stirring the mixture till it becomes thick in nature and transparent in texture. Now, you would require a Sev maker at home to carry the further process. With the help of ladle or large spoon, transfer this hot corn flour mixture into Sev maker. Keep a small of bowl of cold water in your other hand along with some cubes of ice. Then press the Sev maker, and as the Sev are formed, place it over the bowl of chilled water filled with ice cubes. Keep the bowl in such a way that the strings of Sev fall in the bow. So keep the placement of bowl exactly below the Sev Maker for the Sev to drop directly into the bowl. Leave the Sev into the bowl for around 1-15 minutes and allow them to solidify and settle. After sometime, you will find that your Falooda Sev is ready.
It is not necessary then you pair the Falooda with the Kulfi. You can also serve the homemade Falooda with any of your favourite homemade ice cream.
