Mango Panna Cotta Recipe Ingredients:
- Ripe Alphonso Mangoes – 2 cups
- Mango Puree – ½ cup
- Fresh White Heavy Cream – 1 ½ cups
- Fat Milk – 1 cup
- Agar agar Strands – ½ tsp.
- Warm Water – 1 cup
- Vanilla Essence – ½ tsp.
- Cardamom Powder – ¼ tsp.
- Lime Juice – 1 tsp.
- Sugar – as per taste
Note: Use 40% low fat cream. You may also use agar agar powder or gelatin. If the mangoes are not fresh, you mango pulp.
Mango Panna Cotta Recipe Steps:
Pre-Preparation:
- Make Mango Puree: Rinse, Peel and Chop the mangoes. Add the chopped mangoes in a blender and make a smooth puree. Transfer the puree in a bowl and keep aside.
- Soak the agar agar stands in the water: Chop the agar agar strands in the small pieces and soak them in water for 15 minutes.
- Make Cream Mixture: In a saucepan, mix the cream, milk and a pinch of sugar. Whisk and stir continually. Let the mixture come to a boiling point. Stir till the sugar dissolves.
- Make Agar Agar Solution: Keep the agar agar and the water solution on the stove. Stir till the strands are completely dissolved.
Note: Turn off the flame when the mixtures have reached their boiling. Chop the strands into tiny pieces with scissors.
Preparation:
- In a small vessel, add the mango puree, sugar and cardamom powder. Stir and simmer well. Squeeze the lemons or add the lime juice.
- Grease the bowl and add the mango mixture. Wrap the bowl and refrigerate it.
- Mix the cream-milk-sugar mixture with the agar agar solution. Stir and whisk well.
- Wait till the mixture becomes less hot. This is called as Panna Cotta.
- Add mango puree and the vanilla essence at this stage.
- Again mix well the ingredients.
- Pour in a serving bowl and cover the lid or wrap with a plastic foil.
- When the mixture becomes warm, keep it in the refrigerator to cool for 5 hours.
And the chilled Mango Panna Cotta is ready to have a sip.
Note: Take the precaution that when you mix the two mixtures, they should be hot.
