Ingredients for Mint Chutney Recipe:

  • Mint Leaves (Pudina)- 2 cups
  • Chaat Masala – ½ tsp.
  • Ginger (chopped) – 1 inch
  • Green Chillies (Chopped) – 2 units
  • Lemon Juice – ½ tsp.
  • Salt – As required
  • Water – 2 tbsp.

Note: Always get the packed fresh Pudina for preparing this Pudina chutney. If buying from the market, you would require approximately 70 grams of mint leaves to make 1 small bowl of mint leaves chutney.

Steps for Mint Chutney Recipe:

It is very easy and simple to prepare the Mint Chutney at home. You have to wash and chop the mint leaves. Then you have to grind these leaves of mint with other ingredients into a smooth paste.

Pre-Preparation for Pudina Chutney:

Clean and Chop Mint Leaves:

  • Take fresh Pudina leaves or mint leaves.
  • Keep these fresh mint leaves in a colander.
  • Wash them nicely under running water.
  • Now, cut the leaves from the stems.
  • Collect 2 cups of chopped mint leaves.
  • Clean the leaves again and keep them aside.

Chop Ginger and Green Chillies:

  • Wash the peeled or whole ginger.
  • Now, take 1-inch ginger and peel them.
  • Roughly chop ginger or finely crush it.
  • Then keep this ginger aside in a bowl.
  • Take the 1 pieces of green chillies.
  • Wash them and deseed the chillies.
  • Roughly chop green chillies as well.
  • Keep the chopped green chillies aside.

Prepare Chaat Masala Powder:

  • Take a grinder and add dry mango powder.
  • Also, add the cumin seeds and peppercorns.
  • Start the grinder and grind to a smooth powder.
  • Add salt, black salt and a pinch of asafoetida.
  • Grind everything once and sieve the powder.
  • Transfer the powder from the grinder to the bowl.
  • Keep this bowl aside for a while.

Lemon Juice:

  • Get the 1 fresh small size lemon.
  • Let the lemon sit out at room temperature.
  • Warm the lemon in a bowl of water.
  • Roll the lemon before cutting it
  • Heat the lemon in the microwave.
  • Freeze the lemon before microwaving it.
  • Cut the lemon lengthwise instead of crosswise.
  • Juice the lemon with the assistance of a fork.
  • Use a juicer to get the lemon juice.
  • Now, take this juice in a bowl and keep it aside.

Make the Mint Chutney:

When the ingredients required to make the mint chutney are ready, then you can start to prepare the Pudina chutney.

  • Now, take a mixer-grinder jar.
  • Wash it and clean it from inside.
  • Add 1 tsp. chopped ginger in the jar
  • Add 2 cups of mint leaves / Pudina leaves.
  • Add 2 chopped and deseed green chillies.
  • Add ½ tsp. of chaat masala in the grinder.
  • Add ½ tsp. of lemon juice in the grinder.
  • Add some salt along with these ingredients.
  • Initially, do not add much salt. Just add a little.
  • Add around 2 tbsp. water just for grinding. (I added less than ½cup of water.)
  • Close the jar lid and grind these ingredients.
  • Grind until you get a smooth paste.
  • Check if the mint chutney needs more grinding.
  • With the help of a small spoon, check the chutney.
  • If needed, grind for 30 more seconds.
  • Take the Pudina chutney and add more salt if required.
  • Add a little bit of water if it is required.
  • Now, grind the Pudina chutney for more 10 seconds.
  • Then finally the mint chutney is prepared.
  • The mint chutney must have a smooth paste like consistency.
  • Transfer the mint chutney into an air-tight container.
  • Store the Pudina chutney in a refrigerator.
  • Use this Mint Chutney (Pudina Chutney) whenever required.

And your refreshing Mint Chutney is ready.

Note: Add more water if the chutney is too thick but do not add too much water.

  • Once the chutney is prepared, immediately store in in a jar or container.
  • If you are not using chutney, then you must keep it in the refrigerator.
  • If you are keeping it outside, then cover the bowl of chutney or close the lid of the jar.
  • To save the time, you can use the readymade packet of chaat masala powder.
  • You can also make the ginger-green chilli paste and add it to the grinder.
  • You can add more chaat masala up to 1 tsp. if it is not strong.
  • You can add black salt or rock salt if you want to prepare the Pudina chutney.
  • While you are grinding the mint chutney, refrain from adding water in more amount.
  • This mint chutney stays well for 4 to 5 days in the fridge.
  • For a spicy chutney, you can add more green chillies.

To prepare this tasty and spicy variation, you will need more ingredients as compared to the simple mint chutney recipe. Check the below list of ingredients:

  • Fresh Curd (Dahi) – 1 ½ tbsp.
  • Fresh Mint Leaves (Pudina) – 1 cup
  • Fresh Coriander Leaves (Dhania) – ½ cup
  • Chaat Masala Powder – ½ tsp.
  • Roasted Cumin Powder (Bhuna Jeera Powder) – ½ tsp.
  • Dry Mango Powder (Amchur) – ½ tsp.
  • Dry Pomegranate Seeds Powder (Anardana Powder) – a pinch
  • Green Chili (Hari Mirch) – 1 or 2 pieces
  • Ginger (Adrak) – 1 inch
  • Garlic Cloves (Lahsun) – 2 to 3 units
  • Onion (Pyaaz) – 1 small unit
  • Black Salt – as per taste

Note: Vegans you can make this chutney with cashew yogurt instead of using dairy yogurt.

To prepare this spicy variation of the simple mint chutney, follow the steps below:

  • Take the large sized mixing bowl.
  • Add freshly prepared homemade curd.
  • Beat it at high pace till it becomes smooth.
  • Whisk till you see the peaks forming.
  • Then add the various spice powders.
  • Sprinkle some salt and stir the mixture.
  • Wash coriander leaves and mint leaves.
  • Chop the coriander leaves and mint leaves.
  • Grind them with chopped ginger and onions.
  • Also, add the green chillies with a little water.
  • Then mix the ground chutney with the curd.
  • Blend both this mixture in the blender.
  • Wait till it becomes uniform in texture and colour.
  • And now transfer the chutney from blender to bowl.

Note: the curd is readily available in the market, but it is always advisable to use homemade yogurt. You can easily make curd at home in minutes.  If you add too much curd, you can balance it by a little bit of tamarind paste.

Variation in Mint Chutney Recipe:

  • You can make this chutney with fried Chana dal or Urad dal. The addition of lentils infuses the nutty aroma in the chutney. It also makes the texture of the chutney granulated.
  • You can also add few peanuts (groundnut) in the mint chutney which gives thick texture.
  • The yogurt or Dahi can be added to prepare the mint dip.
  • The chopped or grated coconut also improves the taste and texture of the chutney.
  • The tamarind paste can also be added for the little tanginess in the mint chutney.
  • You can also do the spice tempering over the ground mint chutney.
  • You can add some sugar in the mint chutney to balance the different flavours.
  • You can prepare the thick consistency chutney or the thin consistency chutney.

Whichever ingredient you choose to make chutney, each time you will get different flavoured chutney. The preparation is same, get all the raw ingredients and blend them with water. The Pudina Chutney can be prepared with the tempering or without the tempering.

To spice temper the mint chutney, heat a pan with oil. Add dry red chilli and fry. Also, add ¼ tsp. mustard and ½ tsp. Urad dal. Roast them till they turn golden. Then add Hing and stir. Pour this hot tempering to the chutney.
