Palak Soup Recipe Ingredients:
Palak / Spinach – 2 cups
Garlic Cloves – ½ cup ( 2 to 3 pieces)
Onions – ¼ cup (finely chopped)
Olive Oil – 1 tbsp.
Butter – ½ tbsp.
Milk – ½ cup
Margarine (Butter Spread) – 1 tbsp.
Gram Flour – 1 tbsp.
Bay Leaves – 1 leaf
Basil Leaves – ¼ cup
Grated Cheese – ¼ tsp.
Sour Cream – 2 ½ tbsp.
Cumin Powder – ¼ tsp.
Warm Water – 2 cups
Salt – as per taste
Black Pepper – as per taste
Note: The use of Margarine is optional. You may use either of bay leaf or basil leaves or us both, the choice is yours.
Palak Soup Recipe Steps:
Pre-Preparation:
Finely chop the Onions and Garlic.
Wash the spinach leaves under the fresh water of tap. Rinse and clean them before chopping. Keep the bowl aside.
Note: You can shred the Palak and also grate the garlic instead of chopping.
Preparation:
Heat the oil over the medium flame in a saucepan.
Add the bay leaf and the basil leaves. Let them fry.
Mix the chopped garlic and fry till it becomes brown.
Now, add the chopped onions and sauté till onions become translucent.
Stir in the chopped Palak into the mixture.
Season well the salt and black pepper.
Take gram flour and transfer it into the mixture.
Pour the water and mix well.
Simmer the mixture till it reaches the boiling point.
Sprinkle cumin powder and stir again properly.
Now, when the mixture becomes little warm, turn off the flame and transfer it to the blender.
Do not transfer the bay leaf and basil leaves.
Blend on medium pace till it forms a smooth paste.
Check for the taste of the paste. If anything is missing, adjust the seasoning and blend it again.
If you feel the paste formed is thick, then add the water and stir.
Restore the paste back on the stove and simmer for 5 minutes along with the milk.
A scoop of sour cream at this time enriches the texture of the soup.
Keep stirring continuously and also add a pinch of salt and black pepper.
Cover the pan and let the soup cook.
After some time, check the soup, turn off the flame and let it cool for few seconds.
And the healthy Palak soup is ready to be served in a bowl.
Note: This soup is best when served hot and warm immediately after it is cooked.
