Let’s learn to make Pav at home step by step.

Ingredients for Pav Recipe:

  • All-Purpose Flour (Maida)– 1 ½ cup
  • Whole Wheat Flour (Atta)– 1 ½ cup
  • Yeast (dry active) – ½ tbsp.
  • Water – 1 cup
  • Oil – 2 tbsp.
  • Sugar – 1 tbsp.
  • Salt – 1 tsp.

Note: You can use any oil but it is recommended to use sunflower oil. You can use 1 tbsp. fresh yeast as well instead of dry active.

Steps for Pav Recipe:

To prepare the Pav at home is very easy. Firs you have to make the dough for pav or bun and then keep them to bake in microwave.

Pre-Preparation for Pav:

Proof the Dry Active Yeast:

  • Take a saucepan and place it over the stove.
  • Add water in the saucepan and turn on the flame.
  • Heat the water for some time over a medium flame.
  • Turn off the flame as soon as the water is warm.
  • Add sugar in the warm water and dissolve it.
  • Now, add yeast in the water and stir the mixture.
  • Keep this mixture aside for some time.
  • Let it rest until the yeast bubbles up and froths.

Note: It is important to proof the yeast well. Otherwise, the Pav won’t be soft and fluffy.

Make the Pav Dough:

  • Meanwhile, take all-purpose flour and wheat flour.
  • Sieve the flour and collect it into a bowl.
  • Now, add salt in the flour and mix it.
  • Add oil in the flour and mix it as well.
  • Add the frothy yeast and mix it in the flour.
  • Mix properly all these ingredients.
  • Now, begin to knead the dough.
  • Keep the dough soft and smooth.
  • Dip your fingers in oil and apply oil over the dough.
  • You can do the same using brush.
  • Now, cover the dough using kitchen napkin.
  • Keep this dough aside for around 2 hours.
  • After 2 hours, check if the dough doubled or not.
  • If required, keep it aside for longer duration.
  • Wait till the dough doubles in the volume.

Note: You can use half-half of milk and water for kneading the Pav dough.

Shape the Dough:

  • Now, take a plate and sprinkle flour on it.
  • Place the doubled dough on the floured surface.
  • Take a bit of the dough and make balls of it.
  • Place it between your palms and roll it to make balls.
  • Now, gently press the balls to make it Pav shaped (circular).

Note: You can make the Pav in the rectangular shape as well.

How to Make Pav:

  • Take a tray and grease it using oil or ghee.
  • Place the pav shaped dough balls on the greased plate.
  • Do the same for rest of the remaining dough.
  • Now, cover it again using the same kitchen cloth for 1 hour.
  • After 1 hour, uncover the pav shaped dough.
  • Then start with the preparation of baking the Pav.
  • Preheat the microwave-oven to 200 degree Celsius.
  • Bake the Pav in the oven for around 30-35 minutes.
  • Check if the pav is baked or not.
  • If required bake them for more 5 minutes.
  • Once pav is baked, remove the tray from the oven.
  • Keep the tray on the wire rack and let the pav cool down.
  • Serve the pav with masala chai or toast it to eat it with Bhaji.

Note: While you place the Pav in the tray, keep two inches gap between them. If you over bake the Pav, it would turn hard from the outside.

This version of Pav Recipe is much quicker and healthier as compared with other varieties. The soft and smooth Pav are the small tiny portions of whole bread. These circular shaped Pav are one kind of small loaf of bread. The Pav is also called as Pao at many places. The preparation of the Pao uses the yeast.   • Kneading the dough is time-taking and also needs little attention.
  • If the dough is too tight, add some warm water and knead again.
  • If the dough is too loose, add some flour (any flour) and knead again.
  • If the dough is too hard, add some warm water and knead again.
  • If the dough is too sticky, add some flour (any flour) and knead again.
  • Be careful and check that the surface of the bread does not become brown.
  • These baked bun or Pav can be stored in fridge for a week. They can stay edible for 3 to 4 days if kept in room temperature.
  • Use a good quality yeast. If it is out of its shelf life, then it won’t become frothy.
  • You can also add milk powder in this recipe if you are adding milk.
  • You can also use honey instead of sugar for the proofing of yeast. Mix in the hone in the warm milk and pour in to the flour mix.

Garnishing Ideas:

Once the buns are baked, give their surface a shiny and glazy texture. Brush the baked buns with the melted butter or little oil.
