Red-Kidney Bean Tacos Recipe Ingredients:
- Tortillas – 10 pieces (1 packet)
- Red Kidney Beans – 1 bowl (large tin)
- Onions – 1 cup (finely chopped)
- Tomatoes – 1 cup (roughly chopped)
- Red Bell Peppers – ¼ cup (deseed and thin sliced)
- Green Bell Peppers – ¼ cup (deseed and thin sliced)
- Yellow Bell Peppers – ¼ cup (deseed and thin sliced)
- Jalapenos – ¼ cup
- Olives – 3 tbsp.
- Garlic Cloves – ½ tsp.
- Green Chilies – 1 green chili
- Cumin Powder – ½ tsp.
- Red Chili Powder – ½ tbsp.
- Salt – as per taste
- Black Pepper – 1 tsp.
Note: The taco shells are also available in the market. You can buy and directly add the filling inside. These are the ready-made tacos. There are two types of Tortillas – Corn / Flour, you can use any of these.
Red-Kidney Bean Tacos Recipe Steps:
Pre-Preparation:
- Take the red-kidney beans in bowl and wash it under the tap. Rinse them properly and drain the extra water.
- Steam the tortillas over the burner from both the sides. Flip tortillas with the help of tongs. Use pan to avoid burning of tortillas.
Note: If you are using microwave for the making the vegetarian red-kidney bean tacos recipe, then preheat oven to 180 degree C. Apply the oil to the baking tray evenly and place the tacos filled with the kidney beans mixture.
Preparation:
- Take a non-stick pan and heat the oil over a medium flame till it crackles.
- Add chopped Onions and sauté till they change color to brown. Mix garlic cloves and stir for 5 minutes until they are translucent.
- To this mixture, add olives, jalapenos, bell peppers, green chilies, cumin and chili powder. Sprinkle salt and pepper and the season the mixture evenly.
- To the mixture, add finely chopped tomatoes and water.
- Now add the kidney beans to it and stir well. Turn off the flame and transfer the filling to a bowl.
And the delicious filling of tacos is ready to use. Place the cooked tacos over the warming tray and spread the mixture evenly, half flip the tortilla from one side. Your nutritious Tacos are all set to take the bite…
