Sooji Halwa Recipe Ingredients:

  • Semolina – 1 cup
  • Sugar – ¾ cup
  • Ghee – ½ cup (use patanjali cow ghee)
  • Cardamom Seeds – 5 pieces
  • Saffron Strands – a pinch
  • Pistachios – ½ cup
  • Khoya – ¼ cup
  • Walnuts – ½ cup
  • Cashews – ½ cup
  • Raisins – ½ cup
  • Corn flour – ½ cup
  • Warm Water – 2 cups

Sooji Halwa Recipe Steps:

Pre-Preparation:

  1. Sugar Syrup:
    • Take water and heat it.
    • When the water is hot, add the sugar.
    • Wait till the sugar solution come to a boil.
  1. Cornflour Mixture:
    • Take a corn flour in a bowl.
    • Add the water it that bowl.
    • Mix them well till it becomes the thick paste.
  1. Cardamom Powder:
    • Crush the cardamom Seeds.
    • Take into the mortal pestle.
    • Grind the seeds into fine powder.

Note: It is fine if you do not make the sugar syrup and add sugar with warm water later on.

Preparation:

  • Take a thick bottom saucepan and heat it over a low flame.
  • Add the ghee and let it melt.
  • Once the ghee is melted, and it has become hot, mix the semolina.
  • Stir the semolina mixture very well.
  • Now add the cashews and stir again.
  • Cook the semolina till it changes color.
  • Wait till it raw smell from the mixture vanishes.
  • Add into the mixture of semolina, the chopped dry fruits you have used like walnuts, almonds, cashews, pistachios, raisin and dates.
  • Now add the warm water to this mixture of semolina and dry fruits.
  • Keep on stirring till the semolina and the dry fruits becomes golden brown in color.
  • Stir well so that ingredients mix well. Then add sugar and again stir.
  • You have to keep on stirring so that the semolina does not stick to the bottom of the pan.
  • Also, you have to simmer so that the semolina and the dry fruits get roasted evenly.
  • Mix the corn flour paste with this mixture and again stir.
  • Now add the cardamom powder with few raisins once again.
  • Sautee the mixture very well.
  • Now stir and add the hot sugar syrup solution.
  • It may sputter, so be careful while you pour it into the pan.
  • Quickly stir the mixture.
  • Sooji will absorb all the water from the mixture.
  • The mixture would swell due to the water absorption.
  • Add khoya to this mixture and whisk well.
  • Add ghee in the increase of 1/3 tbsp.
  • Simmer well till the whole mixture becomes thick and one.
  • It will start to leave the edges of the pan.
  • When it’s cooked, turn off the flame.
  • Sprinkle some nuts, to season the mixture with flavors of nuts.

And the sweet Sooji Halwa is ready for the delicious serve!
Note: Mix corns flour paste only when semolina has been roasted.
