Sweet Corn Soup Recipe Ingredients:
Sweet Corns – 1 cup
Spring Onions – 1 cup
Green Peas – ¼ cup
Garlic Cloves – 1 ½ tsp.
Onions – 1 cup (finely chopped)
Potato – 1 cup
Celery – 1 tsp.
Olive Oil – 1 tbsp.
Butter – ½ tbsp.
Beans – ¼ cup
Margarine (Butter Spread) – 2 tsp.
Coriander Leaves – ¼ cup
Cauliflower – ¼ cup
Carrots – ¼ cup
Corn Starch – ½ tbsp.
Sour Cream – 1 tbsp.
Warm Water – 2 cups
Milk – 1 cup
Salt – as per taste
Sugar – as per taste
Black Pepper – as per taste
Note: You can use vegetable stock in place of milk.
Sweet Corn Soup Recipe Steps:
Pre-Preparation:
Soak the cornstarch in water to make thick.
Wash and finely chop all the veggies.
Boil and extract or scrape the corn kernels from the corns.
Take few kernels aside and for rest form a paste.
Corn Paste: Grind garlic cloves with corns in a blender.
Note: If you are directly using corn kernel then do not boil.
Preparation:
In a large pot, boil all the chopped veggies excluding onions and spring onions.
In the pot of warm water add potato, peas, cauliflower, beans and carrots.
Take a nonstick pan and heat oil or butter in it.
Sauté the onions till they change the color to golden and become translucent.
Add the spring onions, cook and give a toss.
Now, mix the chopped celery and again sauté for a minute.
When the veggies are soft and cooked, transfer the boiled veggies from pot to the pan.
Stir and add the corn paste
Pour some water with along with milk and simmer.
Allow the soup to cook, wait till the boiling point.
Transfer the corn kernels from bowl to the pan.
Sprinkle sugar, salt and black pepper powder.
Now mix corn starch and simmer for 5 minutes.
Wait till the soup gets thick consistency.
Simmer well till the corn flour cooks.
Add the sour heavy cream to adjust the consistency.
Stir the sour cream for few minutes.
Check the sides to avoid it from getting burned.
Simmer for 10 minutes till it gets cooked completely.
Cover the pan, and bring the soup to the boiling point.
Season the soup with the chopped coriander leaves.

For the low-fat soup, it is advisable to use fat-free sour cream.
