Vegetarian Paella Recipe Ingredients:
Brown Rice – 1 bowl
Onion – 1 cup (finely chopped)
Tomato – 1 cup (roughly chopped)
Green Bell Peppers – ¼ cup
Red Bell Peppers – ¼ cup
Yellow Bell Peppers – ¼ cup (sliced thinly)
Green Chilies – ½ cup
Red Chilies – 1/2 cup
Broccoli – 2 cups (finely chopped)
Baby Corn – ¼ cup
Carrot – 1 small sized
Peas – 1 cup
Beans – ½ cup
Coriander Leaves – 1 cup each
Curry Leaf – 1 piece
Cilantro Leaves – ¼ cup
Parsley Leaves – ¼ cup
Ginger – 4 pieces (grated)
Garlic – 3 cloves
Red Chili Powder – ¼ tsp.
Cumin Powder – ¼ tsp.
Other Seasonings – ¼ tsp.
Oil – ¼ tsp.
Wine – 1 cup
Vinegar – less than ¼ tsp
Sugar – a pinch
Black Pepper – ¼ tsp.
Salt- as per taste
Note: If you do not have wine or if you do not use wine, then best substitute to wine is: Juice of Apple/Carrot or Vegetable Stock.
Vegetarian Paella Recipe Preparation Steps:
Pre-Preparation:
Soak the rice in the boiling water they are cooked and become soft. Drain off the extra water, and transfer the rice in bowl of cool water. Keep them aside to rest.
Note: If you are using frozen bag of vegetables, then while cooking make sure you cook till they are thaw. Tip here is to separately cook vegetables first.
Preparation:
Heat oil in a large non-stick sauté pan over a medium flame. Add Onion, garlic, red peppers along with sausages and seasonings. Stir till Onions become translucent and achieve golden texture.
Now mix all the vegetables and bell peppers over a high heat. Sprinkle the spice powders available. Transfer rice from bowl of cool water to this heated pan of mixture.
Before you cover the pan, add wine and water. When the water reaches its boiling point, the mixture starts giving bubbles, reduce the flame of the gas. The rice should absorb all the liquid and must be soft in nature.
Sprinkle with salt and salt to raise the richness of flavors. Lastly squeeze the lemon juice over the rice.
Season the rice with any topping you consider best and serve hot.
Note: Feel free to use fresh vegetables according to season and their availability.
